This curly boy cake is a deliciously moist and soft cake with blueberries. This cake was on the table at almost every single birthday party growing up. It’s called curly boy cake because we would arrange the cake into a round shape on a cake platter and cover it with chocolate shavings that resembled curls. The smell of this biscvit base baking in the oven brings me nostalgia:) In fact this year for my son’s third birthday, we baked this cake together!

What is a Curly Boy Cake?
To sum up, it’s pretty much a biscvit base cut up into squares and smothered in a whipped cream frosting with blueberries. Biscvit is a Russian sponge cake that tastes delicious and is super easy to whip up.
This recipe came from my mother, except I cut down on the sugar and instead of cool whip, I whipped up some heavy whipping cream.

What You’ll Need

Ingredients for the Curly Boy Cake
- 2 eggs
- 1/2 cup sugar
- 1/2 can of sweetened condensed milk
- 5 Tbsp sour cream
- 2 tsp baking soda(dissolve with vinegar)
- 1.5 cups all-purpose flour
Ingredients for the Cream
- 16 oz heavy whipping cream
- 6 Tbsp sour cream
- 1/2 can of sweetened condensed milk
- 1 cup blueberries
Let’s make the Curly Boy Cake
- Preheat the oven to 350 Degrees F.
- Beat the eggs with the sugar on high speed using a hand mixer until it becomes foamy and fluffy.
- Add the rest of the ingredients into the egg mixture and mix until combined. Use a spatula to scape the sides of the bowl to make sure all of the flour gets integrated into the cake batter.
- Line a baking sheet with parchment paper and pour the batter into the sheet.
- Bake for about 25 minutes or until a toothpick comes out clean.
- Once the cake cools down, cut up the sheet cake into bite-sized cubes.







How to Make the Cream
- Beat 16oz (or 2 cups) of cold heavy whipping cream until stiff peaks form.
- Add in the sour cream and sweetened condensed milk and mix until incorporated.
- Fold in the blueberries.





How to Assemble the Cake
- In a large bowl, mix together the pieces of the biscvit cake and the cream. Be sure to set aside a bit for the top.
- Lay these drenched cake pieces out onto a platter(I like to use this glass 9×13).
- Use the leftover cream to top the cake.
- Grate some chocolate on top of the cake to form little curly shavings.
- Place into the refrigerator for at least an hour before serving.
