Chocolate Chia Seed Pudding Recipe

Need a grab-n-go breakfast? Or are you looking for a healthy option as a dessert this holiday season? This chocolate chia seed pudding can be the answer to both of those! Chia seed pudding is a perfect make-ahead option, but can also can be made about 30 minutes before digging in. Flavor your chia seed pudding in any way you like. In this recipe, I show you how to make the chocolate version with cocoa powder. This chocolate flavor pairs nicely with fresh strawberries:)

Ingredients

  • 1 cup milk(any kind works)
  • 4 tbsp chia seeds
  • 2 tbsp cocoa powder
  • 2 tsp maple syrup
  • 1 tsp vanilla extract

How to Make Chocolate Chia Seed Pudding

  1. Mix all of the ingredients in a bowl with a whisk. Be sure to mix well so that there aren’t any lumps of chia seeds.
  2. Place in the refrigerator for 30 minutes and stir again. You can eat the pudding already or leave it in the fridge until you need.
  3. Serve the chocolate chia seed pudding just the way it is, or top it with some whipped cream and strawberries.

Chia Seed Health Benefits

If you are part of any sort of crunchy mama community, chances that you have been acquainted with chia seeds are pretty high. Even though you can technically live without this trendy superfood, chia seeds make a delicious pudding that is full of omega-3s, protein, and fiber. It’s better not to eat chia seeds plain because it’s easier for your body to digest them when they’re soaked. Also, chia seeds expand when mixed with liquid, so it is best not to eat them dry or else they can grow in your esophagus.

Toppings for the Chocolate Chia Seed Pudding

There are tons of options for toppings and really anything you like can go well, but here are some ideas to get your creativity soaring.

  • chocolate chips
  • strawberries
  • raspberries
  • blueberries
  • pomegranates
  • pecans
  • crushed walnuts
  • slivered almonds
  • coconut flakes
  • whipped cream
  • yogurt

Chocolate Chia Seed Pudding

Top this pudding with some whipped cream and strawberries foe the perfect grab-n-go breakfast!

  • 1 cup milk (whatever kind you prefer)
  • 4 tbsp chia seeds
  • 2 tbsp cocoa powder
  • 2 tsp maple syrup
  • 1 tsp vanilla extract
  1. Mix all of the ingredients in a bowl with a whisk or mixer. Be sure to mix well so that there aren't any lumps.

  2. Place in the refrigerator for at least 30 minutes or overnight. Serve the pudding cold.

  3. Top this chocolate chia seed pudding with your favorite toppings, like whipped cream and strawberries.

*Feel free to use any kind of milk. I’ve made this recipe with oat milk and it turned out great. Almond milk, lactose-free milk, or coconut milk are other great alternatives.
