Homemade Mayonnaise
First time I made mayo from scratch, I was mesmerized by how easy it was! As long as you use an immersion blender, this whole process from start to finish takes literally 2 minutes. Feel free to tweak this recipe to suit your preferences!
Ingredients
- 1 cup olive oil
- 1 egg
- 2 tsp apple cider vinegar
- 1/2 tsp dijon mustard (optional)
- 1/2 tsp salt

Substitutions
Olive oil can be substituted for any other oil of your choice. If you don’t love how olive oil tastes, I also have made this mayo recipe with avocado oil, which tastes just as phenomenal if not better. Apple cider vinegar can be substituted with distilled white vinegar or lemon juice. As long as there is some form of acidity, the mayonnaise will turn out. The dijon mustard is completely optional, though I do prefer the flavor it adds to the mayo.

How to Make Homemade Mayonnaise
- Place all of the ingredients into a wide-mouth mason jar.
- Using an immersion blender, start blending all of the ingredients at the bottom of the jar.
- Once the bottom of the jar starts getting thicker, start moving the immersion blender up slowly. This allows the consistency of the mayonnaise be thick and even throughout.
- Enjoy your homemade mayonnaise in your sandwich or whichever recipe calls for mayo.

Tips
This homemade mayonnaise recipe yields amazing results and should be just like the consistency of store-bought mayonnaise. If the mayonnaise doesn’t thicken correctly, you probably moved the immersion blender up too soon. Don’t worry though because this is an easy fix! All you need to do is add another egg and try again. This happened to me a few times and the mayo tastes delicious. You can’t taste the extra protein from an additional egg:)
