Mixed Berry Cobbler Recipe- Perfect Late Summer Dessert

Are you on the search for something impressive to bake for when some company comes over or something special for your family’s dessert? Whatever the occasion, this berry cobbler recipe will be a hit in your home. Guaranteed! There is really no room for mistakes and it turns out every time:)

Now that we’re in September, it seems like everyone is ready to take out the pumpkins and dress up in sweaters. I’ve been seeing apple pie and cinnamon roll recipes around the internet. However, it is still in the three digits where we live. Even though I am fully ready for the cooler weather, I made up my mind to savor these last summer days and enjoy my cobblers to the fullest. They pair so nicely with vanilla ice cream and are a quick go-to in my kitchen. Here is my favorite berry cobbler recipe that I have been making so often. (Maybe too often hehe)

This recipe is originally from the Magnolia Table Volume II cookbook, but it was made with peaches instead of berries. I tweaked that recipe quite a bit to suit our tastes. Feel free to switch it up and add any choice of fruit to substitute the three cups of berries. I bought the frozen mixed berries from Costco and it has blueberries, raspberries, and blackberries.

Ingredients

  • 3 cups of frozen mixed berries
  • 1 cup sugar
  • 1 cup all-purpose flour
  • 1 tbs baking powder
  • 3/4 cup whole milk
  • 8 tbs (1 stick) salted butter
  • vanilla ice cream, for serving

How to Make the Berry Cobbler

Step 1: In a large bowl, mix together the dry ingredients- flour, sugar, and baking powder. Stir in the milk and mix until combined.

This is what the cobbler batter looks like once combined.

Step 2: Place butter into a baking dish and set it into the oven. Preheat oven to 350 degrees F. Take out the dish when butter is fully melted(around 3 minutes).

Step 3: Pour the cobbler batter into the baking dish on top of the melted butter. Spoon the four cups of frozen berries over the batter.

Step 4: Bake for 45 minutes or until a wooden toothpick comes out clean. Allow the cobbler to rest for about 10 minutes before serving warm with a scoop of vanilla ice cream.
