Kompot Recipe

There is nothing more refreshing on a hot summer day than a glass of chilled kompot from the fridge. What is kompot? Kompot is a sweet Russian juice made by boiling an assortment of fresh fruit or berries.

There isn’t a specific recipe that I use every time because the secret behind a delicious kompot is using ripe fruit. So, use whatever is in bounty in your area! We have lots of peaches and plums right now, so I like to use those with some frozen berries. If you live in a state where there is lots of fresh berries, fresh berries would work even better!

Traditionally, kompot is made with sugar, but I like to substitute it with honey sometimes. My husband is a beekeeper and we always have honey on hand, so why not use it in this drink too? Honey is also healthier than refined sugar.

Ingredients:

  • 1 gallon of water (16 cups)
  • about 12 cups of fruit/berries of your choice
  • 1 cup of sugar or honey

Fruits & Berries

Any kind of fruit goes very well in kompot, but here are some options to give you some ideas. We like to use plums, apricots, peaches, apples, pears, cherries, grapes, raspberries, strawberries, blueberries, blackberries, cranberries, and grapes.

How to Make Kompot:

  1. Set a gallon of water to boil.
  2. In the meantime, wash and cut up the fruit.
  3. Add the fruit into the water and bring it back to a boil.
  4. Lower the heat and simmer for about half an hour.
  5. Remove from the heat and add the sugar or honey.
  6. Cool the kompot and refrigerate.
  7. Strain before serving the kompot.

Leaving the fruit in the juice allows the flavors to deepen and marinates a little bit longer. If you are pressed with time, feel free to strain the kompot as soon as it cools down to room temperature. Some people like to drink it warm, but it tastes much better when it’s cooled, especially when it’s 100 degrees outside!
