12 Days of Christmas Series: Day 9- Hot Chocolate Mix and Marshmallows

Recently I’ve been on a homemade marshmallow kick and thought that it would be so fun to gift from-scratch jars of hot chocolate mix to enjoy with the marshmallows. Hot chocolate with marshmallows is such a sweet treat that you don’t have to feel guilty about drinking, especially when all the ingredients are top-notch!

Yesterday my nephews and niece came over and we had some of this hot chocolate with the homemade marshmallows. It was a hit! They left home with more marshmallows to enjoy with hot cocoa.

Hot Chocolate Mix

For the small glass mason jar that I used, I was able to make 5 servings of the dry ingredients for the hot cocoa. So, I mixed together 10 tablespoons of cocoa powder with 5 tablespoons of sugar and added a dash of salt.

Homemade Marshmallow Recipe

Pour 1/2 cup water into bowl and add in 3 tbsp of gelatin to bloom. In a saucepan, pour in 1/2 cup water, 1 cup of maple syrup or honey(or half of each), and 1/4 tsp salt. Turn on medium-high heat for 15 minutes. Use a hand mixer to break up the gelatin in the bowl and slowly add in the hot mixture. Gradually raise up the speed and beat on high for about 10 minutes, or until it triples in size and looks marshmallow-y. At the last minute, add in a tsp of vanilla extract. Line a 9×13 pan with parchment paper and sift some powdered sugar on top. Pour the marshmallow mixture on top and let it firm up in the fridge for a few hours.

Recipe for a serving of Hot Chocolate

3 tbsp hot cocoa mix
1 cup milk
1 marshmallow

We like to boil some water and add the 3 tbsp of hot cocoa mix with a little bit to hot water to mix it all up. Then, we froth up our milk and pour that into the cup with the hot chocolate. Top it off with the homemade marshmallow and ta-da!
