Instant Pot Refried Beans

Perfect recipe for dips, tacos, burritos, or just as a side!

Ingredients
  

  • 1 lb black beans
  • 6 cups water or broth
  • 1 onion chopped
  • 4 garlic cloves minced/pressed
  • 1 tbsp crushed red pepper
  • 1 tsp paprika
  • 1/2 tsp dried oregano
  • 1/2 tsp garlic powder
  • 1/2 tsp cumin
  • 1 1/2 tsp salt
  • 1 tbsp lemon juice

Equipment

  • 6 Qt. Instant Pot
  • immersion blender

Method
 

  1. Soak the beans in water overnight.
  2. Add beans, water or broth, onion, garlic, crushed red pepper, paprika, dried oregano, garlic powder, cumin, salt, and lemon juice into the instant pot.
  3. Turn the "Manuel" button on the instant pot and set the time for 50 minutes.
  4. Seal the steam release handle.
  5. When timer is up, let it stand for another 10-15 minutes without releasing the steam.
  6. Release the steam and blend the bean mixture using the immersion blender until it is creamy.
  7. Enjoy in dips, tacos, burritos, or on the side!

Notes

  • once it cools, feel free to freeze for later!
  • you could also use pinto beans for this recipe
  • if you want to make it spicier, add 1 jalapeƱo or chili powder
  • if you don't have an immersion blender, you could mash by hand
