Delicious Ground Beef Stuffed Bell Peppers

These ground beef stuffed bell peppers are so delicious and surprisingly filling! Do you have a lot of bell peppers from your garden that you do not know what to do with? Well, this recipe is for you then!

Ingredients for Stuffed Bell Peppers

  • 8-10 medium bell peppers
  • 1 pound ground beef
  • 4 cups water
  • 1 diced onion
  • 2 shredded carrots
  • 1 diced tomato
  • 4 minced garlic cloves
  • 4 tbsp oil for frying
  • 2 tsp salt
  • 1 tsp black pepper
  • 1 tsp ground oregano

Toppings

Some toppings that add a pizzazz to this already delicious recipe are:

  • Shredded Cheese
  • chopped chives or green onion
  • Fresh parsley, dill, or cilantro
  • Sour cream

Instructions

Cut the stems off the bell peppers and take the seeds out. Leave the stems to cover the stuffed bell peppers.

    Bring the 4 cups of water to a boil in a large pot and place the empty bell peppers in the water. Let them boil for 3 minutes and turn off the water. Let the bell peppers sit in there until it’s time to stuff them.

      Mix the ground beef with an egg by hand.

      Next, pour 4 Tbsp of oil into a pan and on medium heat, fry the diced onion, shredded carrots, and diced tomato for about 5-7 minutes or until the mixture is golden brown.

      In a bowl, mix the carrot mixture with the ground beef and all the spices.

      Then, take the boiled bell peppers and stuff them with the ground beef and carrot stuffing.

      Covering the bell peppers with their lids, place them back into the pot of water and turn it back on to medium heat.

      Let the bell peppers simmer in the pot of water for about 40 minutes. Make sure the water isn’t boiling but just simmering.

      Take the bell peppers out of the pot, garnish with desired toppings and a dollop of sour cream! Enjoy!

        Baking Method for Stuffed Bell Peppers

        You could also bake these bell peppers by frying the ground beef with the carrot mixture until cooked, stuff the bell pepper shells with this, then place the stuffed bell peppers onto a pan and bake at 375°F for 15-20 minutes.

        Filling Variations

        This recipe is so versatile, you could add cooked rice to the filling as well to make it even more nutritious. Just the ground beef and carrot mixture is delicious too.

        10. Take the bell peppers out of the pot, garnish with desired toppings and a dollop of sour cream! Enjoy!

        • Rice would be a great filler for the recipe too!
        • Could bake instead of boil as well.
